I've been doing so much baking lately haven't I? I hope y'all aren't sick of it yet. I'm certainly not. I'm going to visit Brandon on his lunch break again today so I'm using that as an excuse for some baking time. The best part of summer break has definitely been seeing Brandon way more than during the school year. What a blessing it's been.
I posted some cookies like this on Enchantment Tuesday a while back and decided to make my version of them.
Oreo Crumb Vanilla Cookies
1 (18oz) package French Vanilla cake mix
2 eggs
1/2 cup vegetable oil
1 teaspoon vanilla
1/2 cup-1 cup crushed Oreos (I used my food chopper)
chocolate chips
1 tablespoon vegetable oil
Mix first 5 ingredients to form a batter. Roll into balls and bake at 350 degrees on greased cookie sheets 8-10 minutes. Allow to cool on a wire rack. Melt chocolate and tablespoon vegetable oil until smooth and dip cookies in it. Place on wax paper to cool. I dipped most in chocolate and left a few plain. They're pretty divine both ways ;o)
