Special sandwich cookies

  Happy, happy, happy Friday friends! So thankful for this upcoming three day weekend. Yay for sleep and some relaxation! I really haven't been up to much exciting blog worthy stuff. Sooooo I figured I'd share this yummy cookie tutorial I guest posted on A Diamond in the Stuff a couple weeks ago. Just incase you didn't get to visit me over there :o)


   Brandon, my in-laws, and Brandon's coworkers were the judges of these sugary treats and they gave them wonderful reviews. They really are quite simple but look oh, so special



Gotta love Target Clearance.


I could seriously consume an entire bowl of this frosting.


I could also easily consume this entire plate of sprinkles :o)


Cake Mix Cookies
  • 1 (18.5 oz) box cake mix (I used Butter Recipe Yellow)
  • 2 eggs
  • 1/2 cup oil
  • 1 teaspoon vanilla extract
Preheat oven to 350 degrees. Mix ingredients together, roll batter into balls, and place on greased cookie 2 inches apart sheet. Back 8-10 minutes and allow cookies to cool on cookie sheets five minutes before removing to ire cooling rack.

Butter Cream Frosting
  • 1/4 cup butter, softened
  • 2 cups powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
Beat all ingredients together using an electric mixer. Add more milk to make smoother. Refrigerate until no longer running. 

   To assemble the cookie apply a generous (nobody likes skimpy amounts of frosting) blob of frosting on top of one cookie and place another cookie on top, mashing the blob of frosting. Roll the "cookie sandwich" in Sprinkles.
