Autumn Dream

   Oh what an absolutely beautiful Saturday it's been, and it ain't over yet. I really can't think of anything better than taking a walk in the fall with people you love and the spending time in the kitchen just for fun.
   This morning I started off the day going to Goodwill. I found a nice picnic basket and a pitcher that looks like a cow for my parents, (they were pleased) but nothing terribly exciting that I wanted to personalize and add to our little apartment. Since Goodwill offered me nothing exciting to fix up, I had to find some sort of other creative outlet. I turned to baking.

   I recently learned of these delightful Kisses from spabettie. Ever since I saw her use them I've been dying to find some and then figure out a delicious treat to make with them. Here's what I concocted:

 Chocolate Autumn Dream cookie

  • 2 1/4 c. all purpose flour
  • 1/2 c. baking cocoa
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 1/2 tsp. pumpkin pie spice
  • 1 c. butter (softened)
  • 1 c. packed brown sugar
  • 3/4 c. sugar
  • 1 tsp. vanilla extract
  • 2 eggs
  • 2 c. Hershey's Pumpkin Spice Kisses
Combine flour, cocoa, baking soda, salt, and pumpkin pie spice in bowl. In a seperate bowl beat butter, brown sugar, sugar, and vanilla extract with an electric mixer until creamy. Beat eggs into sugar and butter mixture about 2 minutes or until light and fluffy. Gradually beat in flour mixture. Stir in chopped up Kisses. Drop spoonfuls onto an ungreased cookie sheet. Bake in preheated oven at 375 degrees for 8-10 minutes or until puffed. 

Perfect for choppin' up Kisses. This is a wedding gift I plan to love and cherish forever.

The cookies were a little less fluffy than I would have liked. I blame it on my impatience in the kitchen. Perhaps If I had beat them as I should instead of 'till I was bored (probably about 30 seconds) they would have been a tad fluffier. Never the less, they tasted and smelled so nice! They were very chocolaty and pumpkiny, (it's my blog and I'll make of words if I so desire)  my husband was pleased and that pleased me :o)

    I used to always laugh at the slap chop commercials but now...now i understand the glory of a food chopper
